HOW WE GRADE OUR WAGYU.

Every King River carcass is camera graded against the AUS-MEAT marble score, the Australian grading standard, which runs from 0 to 9+. Marble score measures the intramuscular fat that gives Wagyu its texture and flavour, assessed at the ribeye alongside eye muscle area and fat distribution.

Through our ordering system on the King River Compass portal, we’ve integrated MSA and Aus-Meat grading via API from the processing plants. This means each order can be customised right down to its marble score, depending on the program. Customers working to the Japanese BMS or American standards can find their customised product specification sheets in our King River Compass portal.

Certifications, Standards

AUS-MEAT logo with red text on a black background.

GRAIN FED CERTIFICATION

Beef that is processed as Grain Fed has met a series of rigorous standards and comes with clearly traceable documentation.

The feedlot must be accredited with the National Feedlot Accreditation Scheme (NFAS) and audited by AUS-MEAT.

The minimum benchmark for Grain Fed certification is 100 days in the feedlot for Male cattle, meeting specific requirements in the energy and nutritional balance of the grain-based feed.

MSA GRADED

Meat Standards Australia (MSA) is an independent quality system that accurately predicts eating quality for cuts of beef based on a complex series of factors. The MSA cut-based approach considers on-farm, processing, carcass attributes, ageing and cooking pathways, audited across the entire supply chain. King River beef is graded and processed at MSA-licensed facilities.

RAISING EXQUISITE WAGYU

FREE RANGING, RELAXED HERDS.

King River’s breeding program is second to none. Over the decades, we’ve refined our Wagyu genetics to ensure high fertility, relaxed temperament, excellent carcass weight, and prime eating quality with award-winning Wagyu marbling.

Because we are farmers at heart, the quality of life of our Wagyu is of utmost importance to us. After birth, they are gradually prepared for weaning to ensure the process happens without stress. Their growth is completely natural with access to outstanding pasture, water and space, as the herds range freely on our pristine pastures. The result is our perfectly marbled Wagyu, ready for a fine dining experience.

FEED AND FINISHING

LOTUS PARK FEEDLOT.

The King River feedlot at Lotus Park is the beating heart of our operations. The 6,000-head facility is where the majority of our Wagyu are finished, all receiving tightly-controlled, personalised nutrition.

Our operation is clean, smells of the wholesome steam-flaked grain we prepare on site, and is fully shaded so the cattle can eat without sun exposure or dehydration. A professional nutritionist monitors our Wagyu and provides specialised feeding to ensure steady growth and optimal marbling for every King River program.

The majority of feed used in our feedlot is grown on our own farms, with 2,800 hectares under production in a mix of dryland and irrigated cropping. We grow corn silage, cotton, wheat, sorghum, chickpeas and mung beans to give our Wagyu a balanced and nutritious diet.
